If you have tortillas at home, you can fill them with anything. Slow cooker jalapeno lime chicken sounds like a complicated dish, but it is not!
All you need to do is preparing the ingredients, and your slow cooker will finish the job. The result is a delicious, spicy, and nutritious taco filling.

When to Serve It?
Slow cooker chicken is a versatile dish, especially when shredded. You can use it to cook various Mexican breakfast foods, such as chicken quesadilla, enchiladas, burritos, and tacos. The lime and jalapeno will quickly wake you up!
You can also use this chicken to flavor salads, soup, and mac & cheese. Mix the chicken with fried rice and noodles or turn it into a pizza roll filling.
You can also make mini sliders with onions and tomatoes. Shredded chicken is also great to make any sandwiches you like.
The best thing about this recipe? It is a great way to use chicken leftovers! Debone the meat from your Sunday roast or fried chicken and put it in a Ziploc bag.
Place it in the fridge until it is time for you to use the leftover. Don’t forget to peel all the skin and fat, so you end up with lean meat. Shred the chicken only after cooking it.
If you are on a diet or having a little time to prepare nutritious meals, shredded chicken is your savior. It is easy to digest, low in calorie and fat, and high in protein.
Ingredients
This lime chicken recipe uses 1 pound of skinless, boneless meat, preferably breast.
You also need one lime, two jalapenos, and chicken broth (homemade, boxed, or bouillon). The condiments are salt and pepper, 1 teaspoon each.
The key to this dish is the spices. You need 2 cloves of garlic and 1 teaspoon of ground cumin. The other spices are paprika, oregano, and chili powder, ½ teaspoon each.

Directions
Put the ingredients into the cooker in certain orders to ensure perfect cooking.
Start by placing your deboned skinless chicken at the bottom of the slow cooker. Stir the lime juice in the chicken broth before pouring it into the slow cooker.
Mix the dry spices and condiment in a new bowl before pouring them on top of the chicken and broth (stir a little bit to mix them up with the broth).
Slice the jalapenos and pour them last before you close the slow cooker. Set the cooker on low and cook the chicken for four hours.
Once the meat is fully cooked, use a fork to shred it. Stir the shredded meat thoroughly until it mixes well with the juice and spices.
Serving Tips
The easiest way to enjoy this chicken is by placing it in a corn tortilla. Add your favorite shredded cheese (preferably Mexican cheese, like chihuahua or manchego).
For extra protein, add black beans, either whole or refried. This simple taco is a nutritious, protein-filled meal for breakfast, lunch, or dinner.
Shredded chicken with spices is a versatile side dish with delicious flavor and fulfilling quality.
